Ingredients

- 2 cups assorted vegetables (bell peppers, zucchini, carrots, onions)
- 2 tablespoons olive oil

- 1 cup plain yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced

Instructions
- Preheat the oven to 425°F (220°C).
- Chop the vegetables into bite-sized pieces and place them in a bowl.
- Drizzle with olive oil, and season with salt and pepper. Toss to coat.
- Spread the vegetables on a baking sheet in a single layer.
- Bake for 20-25 minutes, or until tender and slightly caramelized.
- While the vegetables are baking, prepare the tzatziki dressing by mixing the yogurt, grated cucumber, minced garlic, lemon juice, and dill in a bowl.
- Serve the baked vegetables warm, drizzled with the cold tzatziki dressing.
