A quick and flavorful side dish featuring fresh green beans roasted with garlic and parmesan for a satisfying crunch.

Ingredients

Scale
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 2 large cloves garlic, minced
  • Salt and pepper, to taste
  • 1/2 cup parmesan cheese, freshly grated
  • Juice from 1/2 a lemon
  • 12 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F.

  3. Place the green beans on the baking sheet. Toss them in olive oil, minced garlic, salt, and pepper.
  4. Spread the green beans in an even layer on the baking sheet.
  5. Sprinkle the grated parmesan over the green beans, covering them evenly.
  6. Transfer the baking sheet to the oven for about 20 minutes or until the beans are lightly browned and crisp-tender.
  7. Remove from the oven and top with freshly squeezed lemon juice and parsley. Season with extra salt and pepper, if needed.
  8. Serve hot!

Notes

For added flavor, consider adding red pepper flakes or nuts. Store leftovers in an airtight container for up to three days.
