- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Preheat the oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a large bowl, mix the olive oil, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- Add the halved potatoes to the bowl and toss until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.
- Garnish with fresh parsley if desired, and serve warm.
Notes
For extra crispiness, soak the halved potatoes in cold water for 30 minutes before roasting and ensure they are dried thoroughly.
