Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the carrots and Brussels sprouts with olive oil, maple syrup, salt, and pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the oven for 20-25 minutes, or until tender and caramelized, stirring halfway through.
