Description

A delightful side dish featuring tender roasted asparagus topped with garlic, tomatoes, and shaved parmesan.


Ingredients

  • 1 lb fresh asparagus
  • 1/2 cup shaved parmesan cheese
  • 1 cup cherry tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the asparagus and place them on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Add minced garlic and chopped tomatoes on top of the asparagus.
  5. Sprinkle shaved parmesan cheese over the asparagus.
  6. Roast in the preheated oven for 15-20 minutes until tender.
  7. Drizzle with balsamic glaze before serving.

Notes
