- 1 lb fresh asparagus
- 1/2 cup shaved parmesan cheese
- 1 cup cherry tomatoes, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- Balsamic glaze, for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- Trim the ends of the asparagus and place them on a baking sheet.
- Drizzle with olive oil and season with salt and pepper.
- Add minced garlic and chopped tomatoes on top of the asparagus.
- Sprinkle shaved parmesan cheese over the asparagus.
- Roast in the preheated oven for 15-20 minutes until tender.
- Drizzle with balsamic glaze before serving.
Notes
For an extra flavor boost, consider adding lemon zest or crushed red pepper flakes. Storage: Leftovers can be kept in an airtight container in the refrigerator for 3-4 days.
