A comforting side dish of crispy roasted red potatoes coated in Parmesan cheese and aromatic spices.


Ingredients

  • 2 pounds red potatoes
  • 3 tablespoons olive oil
  • 1.5 cups grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Wash the red potatoes and cut them into even-sized pieces.
  3. In a large bowl, add the potatoes and pour in three tablespoons of olive oil. Toss well until all pieces glisten.
  4. Sprinkle in one teaspoon of garlic powder, one teaspoon of dried Italian herbs, half a teaspoon of salt, and a quarter teaspoon of black pepper. Mix until the potatoes are thoroughly coated.
  5. Spread the potatoes evenly on a baking sheet.
  6. Sprinkle one and a half cups of grated Parmesan cheese all over the potatoes.
  7. Roast in the preheated oven for 25-30 minutes or until the potatoes are tender and golden brown, tossing halfway through.
  8. Remove from the oven and let cool slightly before serving.

Notes

For added crispiness, ensure potatoes are not overcrowded on the baking sheet. Adjust seasonings to taste.
