- 2 pounds red potatoes
- 3 tablespoons olive oil
- 1.5 cups grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat the oven to 425°F.
- Wash the red potatoes and cut them into even-sized pieces.
- In a large bowl, add the potatoes and pour in three tablespoons of olive oil. Toss well until all pieces glisten.
- Sprinkle in one teaspoon of garlic powder, one teaspoon of dried Italian herbs, half a teaspoon of salt, and a quarter teaspoon of black pepper. Mix until the potatoes are thoroughly coated.
- Spread the potatoes evenly on a baking sheet.
- Sprinkle one and a half cups of grated Parmesan cheese all over the potatoes.
- Roast in the preheated oven for 25-30 minutes or until the potatoes are tender and golden brown, tossing halfway through.
- Remove from the oven and let cool slightly before serving.
Notes
For added crispiness, ensure potatoes are not overcrowded on the baking sheet. Adjust seasonings to taste.
