Ingredients

  • 2 pounds of beef stew meat, cut into 1-inch cubes
  • 4 cups of beef broth
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat vegetable oil over medium-high heat. Add beef and cook until browned on all sides.
  2. Add the chopped onion, minced garlic, and carrots; sauté for about 5 minutes.
  3. Pour in the beef broth and bring to a boil.
  4. Stir in potatoes, thyme, bay leaf, salt, and pepper.
  5. Reduce heat and simmer for about 90 to 120 minutes, or until the beef is tender.
  6. Add frozen peas and cook for an additional 10 minutes.
  7. Remove bay leaf and serve hot.

Notes

For best flavor, use high-quality beef broth and consider browning the beef in batches to avoid overcrowding the pot.
