- 2 pounds of beef stew meat, cut into 1-inch cubes
- 4 cups of beef broth
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 cup frozen peas
Instructions
- In a large pot, heat vegetable oil over medium-high heat. Add beef and cook until browned on all sides.
- Add the chopped onion, minced garlic, and carrots; sauté for about 5 minutes.
- Pour in the beef broth and bring to a boil.
- Stir in potatoes, thyme, bay leaf, salt, and pepper.
- Reduce heat and simmer for about 90 to 120 minutes, or until the beef is tender.
- Add frozen peas and cook for an additional 10 minutes.
- Remove bay leaf and serve hot.
Notes
For best flavor, use high-quality beef broth and consider browning the beef in batches to avoid overcrowding the pot.
