  • 2 teaspoon ss (480 ml) vanilla extract
  • 5 cup ss (840 ml) all-purpose flour
  • 1 tablespoon (240 ml) ground cinnamon
  • 5 teaspoon ss (360 ml) baking powder
  • 1 teaspoon (240 ml) baking soda
  • 1 teaspoon (240 ml) salt
  • 1/2 cups (120 ml) dried cranberries
  • 1/2 cups (120 ml) chopped walnuts

Instructions

  1. Set your oven to 325 degrees F (165 degrees C) and prepare two 8×4-inch loaf pans by greasing and dusting them with flour.
  2. In a large mixing bowl, use an electric mixer to whisk the eggs until they become pale yellow and bubbly.
  3. Incorporate the white sugar, grated zucchini, vegetable oil, mashed bananas, packed brown sugar, and vanilla extract into the eggs, mixing thoroughly until everything is blended smoothly.
  4. Gradually mix in the all-purpose flour, ground cinnamon, baking powder, baking soda, and salt until just combined.
  5. Gently fold in the dried cranberries and chopped walnuts.
  6. Evenly distribute the batter into the two prepared loaf pans.
