Ingredients

  • 20 oz peaches (around 3 large peaches)
  • 1.5 cups white granulated sugar
  • 1 tsp vanilla extract
  • 2 cups water for cooking
  • 1 cup freshly squeezed lemon juice (about 56 ripe lemons)
  • 2 cups cold water

Instructions

  1. Juice the lemons, strain the juice, and set it aside.
  2. Peel the peaches, remove the pits, and slice them.
  3. Add the sliced peaches to a sauce pot, then combine with sugar, vanilla extract, and two cups of water.
  4. Stir the mixture thoroughly and bring it to a simmer over medium heat.
  5. Lower the heat and let the peaches cook until soft, allowing the flavors to meld.
  6. Pour the peach mixture into a pitcher through a strainer, separating the solid peach pieces from the liquid.
  7. Add the remaining cold water and the freshly squeezed lemon juice to the pitcher.
  8. Stir everything together and refrigerate until chilled.
