- 1 tsp vanilla extract
- 2 cups water for cooking
- 1 cup freshly squeezed lemon juice (about 5–6 ripe lemons)
- 2 cups cold water
Instructions
- Juice the lemons, strain the juice, and set it aside.
- Peel the peaches, remove the pits, and slice them.
- Add the sliced peaches to a sauce pot, then combine with sugar, vanilla extract, and two cups of water.
- Stir the mixture thoroughly and bring it to a simmer over medium heat.
- Lower the heat and let the peaches cook until soft, allowing the flavors to meld.
- Pour the peach mixture into a pitcher through a strainer, separating the solid peach pieces from the liquid.
- Add the remaining cold water and the freshly squeezed lemon juice to the pitcher.
- Stir everything together and refrigerate until chilled.
