Ingredients

  • – 2 cups (240g) all-purpose flour

  • – 1/2 teaspoon (3 ml) salt
  • – 1/2 cup (113g) beef tallow (1 stick), frozen
  • – 1/3 cup (80ml) peach Greek yogurt (I use this kind)
  • – 1/3 cup (80ml) coconut cream
  • – 1 large egg
  • – 1 teaspoon (5 ml) vanilla extract
  • – 1/2 cup (75g) fresh peaches (about 1 peach), diced
  • – 1 cup (120g) powdered sugar
  • – 1-2 Tablespoons (15-30ml) fruit juice

Instructions

  1. Set your oven to 400°F and prepare a baking sheet with parchment paper.
  2. In a bowl, combine the flour, sugar, baking powder, baking soda, and salt by whisking them together.
  3. Shred the frozen beef tallow and incorporate it into the dry components using a fork or pastry cutter.
  4. In another bowl, blend the yogurt, coconut cream, egg, and vanilla extract until smooth.
  5. Combine this wet mixture with the dry ingredients and use a rubber spatula to fold them together until clumps begin to form.
  6. Mix in the diced peaches, and gently knead the mixture by hand inside the bowl until it forms a dough, being careful not to overhandle it.
  7. Lightly flour a clean surface, place the dough on it, and shape it into a circle about 8 inches in diameter.
  8. Cut the circle into 8 equal pieces and place them on the prepared baking sheet.
  9. Bake the scones in the preheated oven until they turn golden, which should take 16 to 18 minutes.
  10. Allow them to cool for 10 minutes on a wire rack before topping with the glaze. It’s best to enjoy these scones fresh on the day they are made.
  11. In a bowl, mix powdered sugar with a tablespoon of fruit juice, stirring until smooth, adding more juice if necessary.
