Ingredients
- – 2 cups (240g) all-purpose flour
- – 1/3 cup (67g) granulated sugar
- – 2 teaspoons (10 ml) baking powder
- – 1/4 teaspoon (1 ml) baking soda
- – 1/2 teaspoon (3 ml) salt
- – 1/2 cup (113g) beef tallow (1 stick), frozen
- – 1/3 cup (80ml) peach Greek yogurt (I use this kind)
- – 1/3 cup (80ml) coconut cream
- – 1 large egg
- – 1 teaspoon (5 ml) vanilla extract
- – 1/2 cup (75g) fresh peaches (about 1 peach), diced
- – 1 cup (120g) powdered sugar
- – 1-2 Tablespoons (15-30ml) fruit juice
Instructions
- Set your oven to 400°F and prepare a baking sheet with parchment paper.
- In a bowl, combine the flour, sugar, baking powder, baking soda, and salt by whisking them together.
- Shred the frozen beef tallow and incorporate it into the dry components using a fork or pastry cutter.
- In another bowl, blend the yogurt, coconut cream, egg, and vanilla extract until smooth.
- Combine this wet mixture with the dry ingredients and use a rubber spatula to fold them together until clumps begin to form.
- Mix in the diced peaches, and gently knead the mixture by hand inside the bowl until it forms a dough, being careful not to overhandle it.
- Lightly flour a clean surface, place the dough on it, and shape it into a circle about 8 inches in diameter.
- Cut the circle into 8 equal pieces and place them on the prepared baking sheet.
- Bake the scones in the preheated oven until they turn golden, which should take 16 to 18 minutes.
- Allow them to cool for 10 minutes on a wire rack before topping with the glaze. It’s best to enjoy these scones fresh on the day they are made.
- In a bowl, mix powdered sugar with a tablespoon of fruit juice, stirring until smooth, adding more juice if necessary.
