Description

Delightful peach upside down mini cakes that capture the essence of summer with sweet, juicy peaches and a fluffy cake base.


Ingredients

  • 1 tablespoon unsalted butter (cold)
  • 6 teaspoons light brown sugar
  • 3 fresh peaches (peeled, pitted, and sliced)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup granulated sugar
  • 1/3 cup unsalted butter (at room temperature)
  • 1 large egg (at room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk (at room temperature)

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. Spray the mini muffin pan with non-stick cooking spray to ensure your cakes don’t stick.
  3. In the bottom of each mini muffin cup, place a slice of cold unsalted butter and sprinkle with light brown sugar.
  4. Arrange the sliced peaches on top of the butter and sugar mixture, ensuring an even layer.
  5. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. In another bowl, cream together the granulated sugar and room temperature butter until light and fluffy.
  7. Beat in the egg, vanilla extract, and buttermilk until well combined.
  8. Gradually mix in the dry ingredients until just combined; do not overmix.
  9. Evenly distribute the batter over the peach slices in the muffin pan.
  10. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  11. Remove from the oven and allow them to cool in the pan for a few minutes. Then gently invert onto a cooling rack.

Notes

Serve warm with a dollop of whipped cream or vanilla ice cream. Store leftovers in an airtight container in the refrigerator for up to three days.
