Ingredients
- – 2 apples, cored and sliced into 8 rings
- – 1/4 cup (60ml) all-natural peanut butter
- – 1 cup (240ml) cinnamon-pecan granola, see recipe below
- – 1 cup (240ml) rolled oats
- – 1/2 cup (120ml) almonds, finely chopped
- – 2 tablespoons (30ml) honey
- – 1 tablespoon (15ml) vegetable oil, melted
- – 1/2 teaspoon (3 ml) ground cinnamon
- – Mini chocolate chips, optional
Instructions
- To prepare the granola, begin by setting your oven to 325 degrees F. In a sizable mixing bowl, combine the oats, almonds, honey, melted vegetable oil, and ground cinnamon until thoroughly mixed. Spread this mixture evenly on a large baking sheet lined with parchment paper.
- Place the sheet in the oven and bake at 325 degrees F for approximately 25 to 30 minutes, or until the granola turns a golden hue, making sure to stir it halfway through. Once the baking is complete, allow the granola to cool entirely on the baking sheet. For an optional touch, sprinkle some mini chocolate chips over the granola when it is nearly cool but still slightly warm, so they melt slightly.
- Put the peanut butter in a bowl that is safe for microwave use (or heat it gently in a small saucepan on the stove) and warm it for about 20 to 30 seconds until it reaches a smooth and pourable consistency.
- Pour the warmed peanut butter over each apple ring, then add a layer of the crunchy granola on top. Savor the flavors!
