  • 1/4 cup brown sugar (packed)
  • 10 tablespoons unsalted butter (melted)
  • 1 1/2 cups brown sugar (for filling)
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups heavy cream (for filling)
  • 2 1/2 cups chopped pecans
  • 32 oz cream cheese (room temperature)
  • 1 cup brown sugar (for cheesecake)
  • 3/4 cup sour cream
  • 3/4 cup heavy cream (for cheesecake)
  • 1 teaspoon pure vanilla extract
  • 4 large eggs
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and brown sugar.
  3. Pour in melted butter and mix until crumbs resemble wet sand.
  4. Press mixture into the bottom of a springform pan and bake for 10 minutes; cool.
  5. In a bowl, mix brown sugar and cinnamon for the pecan pie filling.
  6. Stir in heavy cream and chopped pecans; avoid overmixing.
  7. For the cheesecake, beat cream cheese until smooth, then gradually add brown sugar, sour cream, and heavy cream.
  8. Add vanilla extract and incorporate eggs gently one at a time and mix until creamy.
  9. Pour cheesecake batter onto cooled crust; evenly distribute pecan filling on top.
  10. Bake at 325°F (160°C) until the center is slightly jiggly; cool completely before serving.
  11. Garnish with chopped pecans and serve with whipped cream.

Notes

Check for doneness around the edges while making sure the center remains slightly jiggly to prevent cracking. Customize with additional flavorings if desired.
