  • ¼ cup unsalted butter (for the pecan filling)
  • 2 large eggs
  • 1½ cups chopped pecans
  • ½ teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Make the crust: Mix together graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a 9×13-inch dish and chill for 10-15 minutes.
  2. Prepare the cream cheese layer: Beat cream cheese until smooth, mix in powdered sugar and vanilla, then fold in whipped topping. Spread over the chilled crust.
  3. Cook the pecan filling: In a saucepan, combine brown sugar, light corn syrup, and remaining butter. Heat until bubbly, remove from heat, and whisk in eggs, then add pecans, vanilla, and salt.
  4. Layer it up: Once the pecan mixture has cooled, pour it over the cream cheese layer and spread evenly. Refrigerate for at least 4 hours, preferably overnight.
  5. Serve: Cut into bars with a warm knife. Enjoy chilled or topped with whipped cream.
