- 2 filet mignon steaks, approximately 1” thick
- 3 tablespoons mild, high smoke-point oil (vegetable or canola oil)
- A pinch of kosher or sea salt
- 2 tablespoons unsalted butter
- Fresh thyme or rosemary for added flavor
Instructions
- Let your filet mignon steaks reach room temperature for about 30 minutes. Pat them dry and generously season with kosher or sea salt.
- Preheat your oven to 400°F (200°C).
- Heat a cast iron skillet over medium-high heat and add the oil, letting it heat for 2-3 minutes until shimmering.
- Carefully place the steaks into the hot pan and sear one side for 2-3 minutes until a deep brown crust forms. Flip the steaks, then add butter and fresh herbs.
- Turn off the burner and transfer the entire skillet into the preheated oven.
- Monitor the internal temperature using a meat thermometer to achieve your desired doneness.
- Let the filet mignon rest for 5-10 minutes before serving.
Notes
Experiment with different herbs for unique flavors. Use tongs instead of a fork to flip the steaks to retain juices.
