Description

A luxurious yet straightforward recipe for cooking the perfect filet mignon, perfect for special occasions or indulgent dinners.

Ingredients

Scale
  • 2 filet mignon steaks, approximately 1” thick
  • 3 tablespoons mild, high smoke-point oil (vegetable or canola oil)
  • A pinch of kosher or sea salt
  • 2 tablespoons unsalted butter
  • Fresh thyme or rosemary for added flavor

Instructions

  1. Let your filet mignon steaks reach room temperature for about 30 minutes. Pat them dry and generously season with kosher or sea salt.
  2. Preheat your oven to 400°F (200°C).
  3. Heat a cast iron skillet over medium-high heat and add the oil, letting it heat for 2-3 minutes until shimmering.
  4. Carefully place the steaks into the hot pan and sear one side for 2-3 minutes until a deep brown crust forms. Flip the steaks, then add butter and fresh herbs.
  5. Turn off the burner and transfer the entire skillet into the preheated oven.
  6. Monitor the internal temperature using a meat thermometer to achieve your desired doneness.
  7. Let the filet mignon rest for 5-10 minutes before serving.

Notes

Experiment with different herbs for unique flavors. Use tongs instead of a fork to flip the steaks to retain juices.
