- 4 large peaches, halved and pitted
- 1 cup (240 ml) apple juice
- 1 cup (240 ml) apple cider vinegar
- 2/3 cup (160 ml) honey
- 1 1/2 Tbsp (23 ml) minced peeled ginger
- 1/2 tsp (3 ml) ground cinnamon
- 1 vanilla bean (or 1 tsp (5 ml) vanilla extract)
Instructions
- Slice the peaches into different sizes.
- In a medium aluminum saucepan, mix together apple juice, vinegar, honey, ginger, and cinnamon to make the pickling solution and bring it to a boil.
- Once it starts boiling, reduce the heat and let it simmer for 5 minutes. Add the peach slices and continue cooking until they become tender, about 3 to 5 more minutes.
- Take it off the heat and use a slotted spoon to move the peaches into a 1-quart mason jar.
- Scrape the seeds from the vanilla bean and mix them (or use vanilla extract) into the pickling liquid and stir well. Pour this liquid over the peaches.
- Allow it to cool to room temperature, secure the jar with a lid, and refrigerate for up to 2 weeks.
