Ingredients

  • 4 large peaches, halved and pitted
  • 1 cup (240 ml) apple juice
  • 1 cup (240 ml) apple cider vinegar
  • 2/3 cup (160 ml) honey
  • 1 1/2 Tbsp (23 ml) minced peeled ginger
  • 1/2 tsp (3 ml) ground cinnamon
  • 1 vanilla bean (or 1 tsp (5 ml) vanilla extract)

Instructions

  1. Slice the peaches into different sizes.
  2. In a medium aluminum saucepan, mix together apple juice, vinegar, honey, ginger, and cinnamon to make the pickling solution and bring it to a boil.
  3. Once it starts boiling, reduce the heat and let it simmer for 5 minutes. Add the peach slices and continue cooking until they become tender, about 3 to 5 more minutes.
  4. Take it off the heat and use a slotted spoon to move the peaches into a 1-quart mason jar.
  5. Scrape the seeds from the vanilla bean and mix them (or use vanilla extract) into the pickling liquid and stir well. Pour this liquid over the peaches.
  6. Allow it to cool to room temperature, secure the jar with a lid, and refrigerate for up to 2 weeks.
