- 2 1/2 pounds beef stew meat, cut into 1-inch cubes
- Salt and freshly ground black pepper, to taste
- 3 tablespoons vegetable oil, divided
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 3 cups beef broth
- 1/4 cup Worcestershire sauce
- 1/4 cup soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 3 tablespoons cornstarch
- 1/3 cup cold water
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Season the beef stew meat with salt and freshly ground black pepper.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add half of the beef cubes and sear until browned on all sides.
- Remove and set aside. Add another tablespoon of oil and repeat with the remaining beef cubes.
- Remove and set aside.
- Reduce the heat to medium and add the remaining tablespoon of oil to the skillet.
- Add the chopped onion and sauté until translucent, about 4 minutes.
- Add minced garlic and cook for an additional minute.
- Return the beef cubes to the skillet.
- Add beef broth, Worcestershire sauce, soy sauce, dried thyme, and smoked paprika. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover the skillet and let it simmer for 1 1/2 to 2 hours, or until the beef is tender.
- In a small bowl, mix cornstarch with cold water until smooth.
- Gradually stir this mixture into the beef and gravy to thicken.
- Allow the gravy to simmer for another 10 minutes, stirring occasionally until it thickens to your desired consistency.
- Taste and adjust seasoning with additional salt and pepper, if necessary.
- Serve the beef tips and gravy over mashed potatoes, rice, or noodles. Garnish with chopped fresh parsley, if desired.
Notes
Use high-quality broth for the best flavor. Simmer uncovered for the last 10 minutes to enhance gravy thickness.
