Ingredients

  • 2 1/2 pounds beef stew meat, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons vegetable oil, divided
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 1/4 cup soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 3 tablespoons cornstarch
  • 1/3 cup cold water
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season the beef stew meat with salt and freshly ground black pepper.
  2. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  3. Add half of the beef cubes and sear until browned on all sides.
  4. Remove and set aside. Add another tablespoon of oil and repeat with the remaining beef cubes.
  5. Remove and set aside.
  6. Reduce the heat to medium and add the remaining tablespoon of oil to the skillet.
  7. Add the chopped onion and sauté until translucent, about 4 minutes.
  8. Add minced garlic and cook for an additional minute.
  9. Return the beef cubes to the skillet.
  10. Add beef broth, Worcestershire sauce, soy sauce, dried thyme, and smoked paprika. Stir to combine.
  11. Bring the mixture to a boil, then reduce the heat to low.
  12. Cover the skillet and let it simmer for 1 1/2 to 2 hours, or until the beef is tender.
  13. In a small bowl, mix cornstarch with cold water until smooth.
  14. Gradually stir this mixture into the beef and gravy to thicken.
  15. Allow the gravy to simmer for another 10 minutes, stirring occasionally until it thickens to your desired consistency.
  16. Taste and adjust seasoning with additional salt and pepper, if necessary.
  17. Serve the beef tips and gravy over mashed potatoes, rice, or noodles. Garnish with chopped fresh parsley, if desired.

Notes

Use high-quality broth for the best flavor. Simmer uncovered for the last 10 minutes to enhance gravy thickness.
