- 2 lbs ground beef (or ground turkey)
- 1 small onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2–3 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Toppings of your choice: shredded cheese, sour cream, green onions, avocado slices, tortilla chips
Instructions
- Heat a large pot over medium-high heat and add ground beef. Brown the meat until fully cooked, breaking it into small pieces.
- Remove excess grease if needed, then add diced onion, bell pepper, and minced garlic. Sauté until softened.
- Stir in chili powder, cumin, and paprika, letting spices toast for a minute or two.
- Incorporate diced tomatoes and tomato sauce into the mixture, then add beef broth to achieve desired consistency.
- Bring to a gentle simmer for about 30 minutes to blend flavors.
- Add kidney beans and pinto beans, allowing to simmer for an additional 10 minutes.
- Taste and adjust seasoning with salt and black pepper as needed. Serve with your favorite toppings.
Notes
For a vegetarian option, substitute ground beef with lentils and varied vegetables. To adjust heat, modify the amount of chili powder used.
