Ingredients

  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 23 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Toppings of your choice: shredded cheese, sour cream, green onions, avocado slices, tortilla chips

Instructions

  1. Heat a large pot over medium-high heat and add ground beef. Brown the meat until fully cooked, breaking it into small pieces.
  2. Remove excess grease if needed, then add diced onion, bell pepper, and minced garlic. Sauté until softened.
  3. Stir in chili powder, cumin, and paprika, letting spices toast for a minute or two.
  4. Incorporate diced tomatoes and tomato sauce into the mixture, then add beef broth to achieve desired consistency.
  5. Bring to a gentle simmer for about 30 minutes to blend flavors.
  6. Add kidney beans and pinto beans, allowing to simmer for an additional 10 minutes.
  7. Taste and adjust seasoning with salt and black pepper as needed. Serve with your favorite toppings.

Notes

For a vegetarian option, substitute ground beef with lentils and varied vegetables. To adjust heat, modify the amount of chili powder used.
