Ingredients

Scale
  • 2 lbs ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 23 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Toppings: shredded cheese, sour cream, green onions, avocado slices, tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey, breaking it apart as it cooks.
  2. Add the diced onion, green bell pepper, and minced garlic to the pot and sauté until the vegetables soften.
  3. Stir in the chili powder, cumin, and paprika, mixing well.
  4. Add the diced tomatoes, tomato sauce, and beef broth, stirring to combine.
  5. Let the mixture simmer for about 30 minutes to meld the flavors.
  6. Stir in the kidney and pinto beans and adjust seasoning with salt, black pepper, or cayenne pepper as needed.
  7. Serve hot, allowing guests to customize their bowls with toppings like cheese, sour cream, green onions, and avocado slices, alongside tortilla chips.

Notes

Chili tastes even better the next day as the flavors continue to develop. Great for meal prep and can be frozen for longer storage.
