Description

A comforting beef stew slow-cooked to perfection with tender chunks of beef and vibrant vegetables, perfect for family dinners.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 sliced carrots
  • 4 diced potatoes
  • 1 chopped onion
  • 3 minced garlic cloves
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Brown the beef cubes on all sides, then transfer to a crockpot.
  3. In the crockpot, combine sliced carrots, diced potatoes, chopped onion, and minced garlic.
  4. Place the browned beef on top of the vegetables.
  5. In a separate bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  6. Pour the mixture over the beef and vegetables in the crockpot.
  7. Cook on low for 7-8 hours or on high for 4-5 hours.
  8. Serve hot, optionally with fresh bread.

Notes

For a thicker stew, mix a tablespoon of cornstarch with cold water and add during the last hour of cooking. Leftovers can be frozen for later enjoyment.
