Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 sliced carrots
- 4 diced potatoes
- 1 chopped onion
- 3 minced garlic cloves
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the beef cubes on all sides, then transfer to a crockpot.
- In the crockpot, combine sliced carrots, diced potatoes, chopped onion, and minced garlic.
- Place the browned beef on top of the vegetables.
- In a separate bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Pour the mixture over the beef and vegetables in the crockpot.
- Cook on low for 7-8 hours or on high for 4-5 hours.
- Serve hot, optionally with fresh bread.
Notes
For a thicker stew, mix a tablespoon of cornstarch with cold water and add during the last hour of cooking. Leftovers can be frozen for later enjoyment.
