Description

A comforting bowl of potato and corn chowder, packed with flavor from crispy bacon and fresh ingredients, perfect for chilly evenings.


Ingredients

  • 4 slices of bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups potatoes, diced
  • 2 cups corn (fresh or frozen)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside.
  2. In the same pot, add the chopped onion and minced garlic, cooking until softened.
  3. Add the diced potatoes, corn, and broth to the pot. Bring to a boil, then reduce to a simmer for about 15-20 minutes, until potatoes are tender.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Crumble the bacon and add it back to the chowder.
  6. Serve hot, garnished with green onions.

Notes

Feel free to add herbs like thyme or parsley for a fresh touch. For thicker chowder, mash a portion of the potatoes before adding cream.
