- 4 slices of bacon
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups potatoes, diced
- 2 cups corn (fresh or frozen)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside.
- In the same pot, add the chopped onion and minced garlic, cooking until softened.
- Add the diced potatoes, corn, and broth to the pot. Bring to a boil, then reduce to a simmer for about 15-20 minutes, until potatoes are tender.
- Stir in the heavy cream and season with salt and pepper.
- Crumble the bacon and add it back to the chowder.
- Serve hot, garnished with green onions.
Notes
Feel free to add herbs like thyme or parsley for a fresh touch. For thicker chowder, mash a portion of the potatoes before adding cream.
