  • 1 teaspoon (5 ml) ground cinnamon
  • 1/2 teaspoon (3 ml) ground ginger
  • 1/2 teaspoon (3 ml) salt

Instructions

  1. Collect all the necessary ingredients.
  2. In a large mixing bowl, blend together the milk, pumpkin puree, egg, vegetable oil, and vinegar until the mixture is smooth.
  3. In a separate bowl, combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt, then incorporate this dry mixture into the pumpkin blend, stirring until just mixed.
  4. Lightly coat a griddle or frying pan with cooking spray and preheat it over medium-high heat. For each pancake, ladle 3 to 4 tablespoons of the batter onto the hot surface and gently spread the batter with a spoon.
