Ingredients
- – 1/2 cup (120 ml) vegetable oil, melted, cooled to room temperature
- – 1/2 cup (100 g) light brown sugar
- – 1 1/2 cups (180 g) all-purpose flour
- – 1/2 teaspoon (3 ml) baking soda
- – 1/2 teaspoon (3 ml) baking powder
- – 1/4 teaspoon (1 ml) salt
- – 1 teaspoon (5 ml) ground cinnamon
- – 1/4 teaspoon (1 ml) ground cloves
- – 1 1/2 cups (360 g) pumpkin pie mix from a can, not puree
- – 1 large egg
- – 1/2 teaspoon (3 ml) pure vanilla extract
Instructions
- Coat the interior of an 8″ square baking dish with oil and line it with parchment paper. Put it aside.
- Set your oven temperature to 375 degrees F to preheat.
- Warm the vegetable oil until it melts, either using a microwave or stovetop, and let it reach room temperature.
- In a medium bowl, combine the flour, light brown sugar, baking soda, baking powder, cinnamon, cloves, and salt using a whisk.
- Pour in the melted vegetable oil and stir until the mixture resembles coarse crumbs.
- Set aside approximately ¾ cup of this mixture for the topping.
- Firmly press the rest of the dough into the bottom of the prepared dish and set it aside.
- In a large bowl, combine the pumpkin pie mix, egg, and vanilla extract, mixing until thoroughly blended.
- Evenly spread the filling over the pressed crust.
- Scatter the reserved crumb mixture over the top.
- Bake in the oven for 28 to 32 minutes or until the top achieves a golden brown color.
- Allow to cool entirely in the dish before slicing into squares.
