Ingredients

  • – 1/2 cup (120 ml) vegetable oil, melted, cooled to room temperature
  • – 1/2 cup (100 g) light brown sugar
  • – 1 1/2 cups (180 g) all-purpose flour
  • – 1/2 teaspoon (3 ml) baking soda
  • – 1/2 teaspoon (3 ml) baking powder
  • – 1/4 teaspoon (1 ml) salt
  • – 1 teaspoon (5 ml) ground cinnamon
  • – 1/4 teaspoon (1 ml) ground cloves
  • – 1 1/2 cups (360 g) pumpkin pie mix from a can, not puree
  • – 1 large egg
  • – 1/2 teaspoon (3 ml) pure vanilla extract

Instructions

  1. Coat the interior of an 8″ square baking dish with oil and line it with parchment paper. Put it aside.
  2. Set your oven temperature to 375 degrees F to preheat.
  3. Warm the vegetable oil until it melts, either using a microwave or stovetop, and let it reach room temperature.
  4. In a medium bowl, combine the flour, light brown sugar, baking soda, baking powder, cinnamon, cloves, and salt using a whisk.
  5. Pour in the melted vegetable oil and stir until the mixture resembles coarse crumbs.
  6. Set aside approximately ¾ cup of this mixture for the topping.
  7. Firmly press the rest of the dough into the bottom of the prepared dish and set it aside.
  8. In a large bowl, combine the pumpkin pie mix, egg, and vanilla extract, mixing until thoroughly blended.
  9. Evenly spread the filling over the pressed crust.
  10. Scatter the reserved crumb mixture over the top.
  11. Bake in the oven for 28 to 32 minutes or until the top achieves a golden brown color.
  12. Allow to cool entirely in the dish before slicing into squares.
