Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- In a large bowl, combine eggs and granulated sugar. Beat until light and fluffy.
- Stir in pumpkin puree and vanilla extract.
- Sift together the baking soda, cinnamon, ginger, nutmeg, salt, and flour in a separate bowl.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Spread the batter evenly onto the prepared baking sheet, ensuring an even layer.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Once baked, remove the cake from the oven and immediately invert it onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake with the towel into a log shape, starting from the short end. Let it cool completely in this rolled position.
- While the cake cools, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Unroll the cooled cake gently. Spread the creamy filling evenly over the surface.
- Roll the cake back up (without the towel) and wrap it in plastic wrap.
- Refrigerate for at least one hour before slicing and serving.
