- 1/2 cup unsalted butter, softened
- 1 cup dark brown sugar, lightly packed
- 1 cup pumpkin puree
- 2 large eggs
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1½ cups all-purpose flour
- For the streusel topping:
- 6 Tbsp unsalted butter, melted
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 tsp pumpkin pie spice or ground cinnamon
- For the glaze:
- 1 cup confectioners’ sugar
- 1/4 tsp maple extract (or vanilla as a substitute)
- 1 Tbsp maple syrup
- 1 Tbsp milk or cream
Instructions
- Preheat your oven to 350°F and prepare an 8- or 9-inch metal loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, combine softened butter and brown sugar. Beat until smooth.
- Mix in pumpkin puree and then eggs, ensuring to combine well after each addition.
- Add in ground spices, baking powder, baking soda, salt, and flour. Mix on low speed just until combined.
- Spread the batter evenly into the prepared pan.
- For the streusel, combine melted butter, flour, brown sugar, and pumpkin pie spice until it resembles wet sand. Sprinkle over the batter.
- Bake for 55-60 minutes, checking for doneness with a toothpick.
- Allow to cool on a wire rack before preparing the glaze.
- For the glaze, whisk together confectioners’ sugar, maple extract, maple syrup, and milk. Drizzle over the cooled bread.
Notes
For added richness, you can mix dark and light brown sugar in the batter. Store leftover bread in an airtight container at room temperature for up to 3 days.
