- 8 oz block of feta cheese, drained from brine (approximately 220 grams)
- 1/4 cup plain Greek yogurt
- 1 cup unsweetened canned pumpkin puree
- 1–2 Tbsp honey (adjust according to taste)
- 1 tsp dried thyme (or 2 tsp fresh thyme)
- Freshly cracked black pepper to taste
- Fresh thyme for garnish (optional)
- Chopped walnuts (optional; raw or toasted)
- Extra honey drizzle for serving
- Crusty toasted bread (sourdough or baguette)
- Crackers for dipping
Instructions
- Add the feta cheese and Greek yogurt to a food processor. Blend until smooth, scraping down the sides as needed.
- Incorporate pumpkin puree, honey, thyme, and black pepper. Blend again until combined.
- Transfer to a bowl and refrigerate for 30-60 minutes to thicken and meld flavors.
- Once chilled, transfer to a serving bowl, garnish with walnuts and fresh thyme, and drizzle with honey.
- Serve with crusty toasted bread or crackers.
Notes
Adjust the amount of honey to your taste for sweetness. For a chunkier dip, fold in chopped walnuts instead of blending them in.
