Description

Delicious one-pan enchiladas made with ground beef, black beans, and cheese, all simmered in enchilada sauce for a quick and satisfying meal.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cups enchilada sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 cups shredded cheese (optional)
  • Tortillas (corn or flour, for serving)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned.
  2. Add diced onion and bell pepper, cooking until softened.
  3. Stir in black beans, corn, cumin, chili powder, salt, and pepper.
  4. Pour in the enchilada sauce and mix well.
  5. Let the mixture simmer for a few minutes.
  6. If using, sprinkle cheese on top and cover until melted.
  7. Serve with tortillas and garnish with fresh cilantro, if desired.

Notes

For extra heat, add diced jalapeños or cayenne pepper. Adjust seasoning according to taste.
