- 1 lb lean ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cups enchilada sauce
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups shredded cheese (optional)
- Tortillas (corn or flour, for serving)
- Fresh cilantro, for garnish (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned.
- Add diced onion and bell pepper, cooking until softened.
- Stir in black beans, corn, cumin, chili powder, salt, and pepper.
- Pour in the enchilada sauce and mix well.
- Let the mixture simmer for a few minutes.
- If using, sprinkle cheese on top and cover until melted.
- Serve with tortillas and garnish with fresh cilantro, if desired.
Notes
For extra heat, add diced jalapeños or cayenne pepper. Adjust seasoning according to taste.
