  • 10 grams instant yeast needs to be instant (about 3 teaspoon (15 ml) s)
  • 2 ounce (57 g) s sugar 4 Tablespoon (60 ml) s
  • 16 ounce (454 g) s warm milk (110 ºF) or water (two cups)
  • 1 1/2 teaspoon (8 ml) salt
  • 2 ounce (57 g) s melted unsalted butter 1/4 cup (60 ml)

Instructions

  1. Warm up the milk until it reaches between 110ºF and 115ºF.
  2. In the bowl of your stand mixer, attach the dough hook and combine the flour, instant yeast, sugar, and warm milk, blending for about a minute.
  3. Incorporate the salt and melted butter into the mixture.
  4. If the dough does not adhere to the bowl due to the butter, sprinkle in an extra ¼ cup of flour. If it continues not to stick, add 1-2 tablespoons of water.
  5. Set your mixer to speed 2 and mix for five minutes.
  6. After mixing, take a piece of dough and stretch it between your fingers. If it forms a thin “window” without tearing, the gluten is sufficient, and you can proceed to shape it.
  7. If the dough tears, continue mixing for an additional two minutes.
  8. On a lightly floured surface, knead the dough for 4-5 turns until you can shape it into a smooth, round ball.
  9. Lightly coat a large bowl with olive oil.
  10. Place the dough in the bowl with the top side down to coat it with oil, then flip it over. Cover with a cloth and let it rise in a warm spot for 25 minutes until it doubles in size.
  11. Set your oven to preheat at 375ºF.
  12. Divide the dough into two parts for loaves, or more if you prefer smaller pieces like rolls.
  13. Allow the loaves to rest for 20 minutes.
  14. Apply an egg wash to the loaves to achieve a golden brown finish.
  15. Using a sharp knife, make three angled slashes on the top of the loaf, approximately ¼ inch deep, to enhance appearance and prevent the crust from tearing while baking.
  16. Bake the loaves for roughly 25-30 minutes or until they turn golden brown. Check the bread’s center with a thermometer; if it reads between 190ºF and 200ºF, your bread is ready.
