- 1 lemon (zested and juiced)
Instructions
- Wash the fresh raspberries and place them in a large pot.

- Roll the lemon on the counter, then zest it, avoiding the white pith.
- Add the lemon zest and juice to the pot, removing any seeds.
- Use a potato masher to gently crush the raspberries.
- Bring the mixture to a boil and skim off any foam that appears.
- Monitor the temperature using a candy thermometer; boil until it reaches 221°F.
- Pour the jam into clean, sanitized mason jars, leaving headspace.
- Wipe the rims, seal, and process jars in a boiling canner for 12 minutes.
- Cool jars for 24 hours before enjoying.
