  3. Roll the lemon on the counter, then zest it, avoiding the white pith.
  4. Add the lemon zest and juice to the pot, removing any seeds.
  5. Use a potato masher to gently crush the raspberries.
  6. Bring the mixture to a boil and skim off any foam that appears.
  7. Monitor the temperature using a candy thermometer; boil until it reaches 221°F.
  8. Pour the jam into clean, sanitized mason jars, leaving headspace.
  9. Wipe the rims, seal, and process jars in a boiling canner for 12 minutes.
  10. Cool jars for 24 hours before enjoying.
