Description

Indulgent and nutritious raw chocolate brownies made with simple, wholesome ingredients without baking.

Ingredients

Scale
  • 2 cups raw unsalted walnuts
  • 2 cups packed pitted medjool dates
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1/4 cup coconut oil
  • 2 tbsp maple syrup
  • Optional: 1/3 cup walnuts (for chunks)

Instructions

  1. Line an 8×8-inch pan with parchment paper or use a mini silicone muffin pan.
  2. In a food processor, pulse the walnuts, medjool dates, cocoa powder, vanilla extract, and salt until a sticky dough forms.
  3. If using the optional walnuts for chunks, add them now and pulse just a few times.
  4. Press the mixture firmly into the prepared pan, smoothing the top.
  5. Melt the dark chocolate with coconut oil and pour it over the brownies, spreading evenly.
  6. Place in the fridge or freezer for at least 1 hour to set.
  7. Remove from the pan and slice into squares or pop out of the muffin pan.
  8. Store in the fridge for up to 1 week or freeze for up to 3 months.

Notes

High-quality cocoa powder enhances the flavor. Feel free to experiment with additions like shredded coconut or chia seeds.
