Ingredients

- 750 g red cabbage
- 300 g apples
- 400 g carrots
- 80 g walnuts
- 225 g vegan feta
- 10 EL apple cider vinegar
- 4 EL olive oil
- 3 EL agave syrup
- Salt to taste
Instructions
- Wash the red cabbage thoroughly and quarter it. Remove the outer leaves and the core. Position the cabbage on a flat side and slice it into fine strips.
- Core the apples and peel the carrots. Coarsely grate both and set aside. Chop the walnuts and crumble the vegan feta, then add all ingredients to a mixing bowl.
- For the dressing, mix apple cider vinegar, olive oil, agave syrup, and salt. Pour the dressing over the salad and mix everything together until well combined.
Notes
Let the salad sit for a few minutes before serving to allow the flavors to meld. Experiment with different nuts for variation.
