Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Beat for 2-3 minutes until light and fluffy.
  3. Add the egg, vanilla extract, baking powder, baking soda, and salt and mix until just combined.
  4. Gradually add the flour and mix on low speed until just incorporated.
  5. Using a large spoon, gently fold in the chocolate chips and Rice Krispies cereal until evenly distributed.
  6. Place scoops of cookie dough, about 2 tablespoons each, on the prepared cookie sheets, spacing about 2 inches apart. Flatten slightly.
  7. Bake for 8-9 minutes until edges just start to turn light golden brown while centers remain soft.
  8. Cool on baking sheet for 5 minutes before transferring to wire rack.
