- 1 cup pumpkin puree (not pumpkin pie puree)
- 1/2 cup softened unsalted butter
- 1/2 cup warm milk
- 2 large eggs (room temperature)
- 2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp kosher salt (or 1/8 tsp of table salt)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour your chosen pan.
- In a bowl, whisk the flour, spices, salt, baking powder, and baking soda together. Set aside.
- In another bowl, cream the softened butter and granulated sugar until fluffy.
- Add the eggs and mix well.
- Incorporate the pumpkin puree and vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Add the warm milk and stir until smooth.
- Pour into the prepared pan and smooth the top.
- Bake for 45-50 minutes for a cake pan or 50-55 minutes for a loaf pan, checking for doneness.
- Let cool for 15 minutes and then remove from the pan to cool completely.

For best results, ensure ingredients are at room temperature before mixing. Use fresh pumpkin puree for enhanced flavor.
