Ingredients

  • 1 pound Brussels sprouts, halved
  • ½ tablespoon extra virgin olive oil
  • ½ teaspoon salt, plus extra for the dressing
  • 2 twists of black pepper
  • 2 tablespoons extra virgin olive oil, for the dressing
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice or lemon juice
  • 2 teaspoons maple syrup or honey
  • 2 teaspoons mustard
  • ½ teaspoon salt for the dressing
  • 2 twists of black pepper for seasoning the dressing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the woody stems of the Brussels sprouts and remove any brown outer leaves.
  3. Rinse the Brussels sprouts in cold water and pat them dry.
  4. Cut the sprouts in half lengthwise to allow for even cooking.
  5. Toss the Brussels sprouts in a large mixing bowl with ½ tablespoon of extra virgin olive oil, ½ teaspoon of salt, and 2 twists of black pepper.
  6. Arrange the sprouts in a single layer on a baking sheet.
  7. Roast the Brussels sprouts for 20-25 minutes until golden brown, stirring halfway through for even browning.
  8. While they roast, prepare the dressing by combining the remaining ingredients in a small jar and shaking vigorously or whisking in a bowl.
  9. Once roasted, transfer the Brussels sprouts to a serving platter and drizzle with the dressing.

Notes

For an exciting twist, consider adding smoked paprika or garlic powder to the seasoning.
