- 1 pound Brussels sprouts, halved
- ½ tablespoon extra virgin olive oil
- ½ teaspoon salt, plus extra for the dressing
- 2 twists of black pepper
- 2 tablespoons extra virgin olive oil, for the dressing
- 1 tablespoon apple cider vinegar
- 1 tablespoon orange juice or lemon juice
- 2 teaspoons maple syrup or honey
- 2 teaspoons mustard
- ½ teaspoon salt for the dressing
- 2 twists of black pepper for seasoning the dressing
Instructions
- Preheat your oven to 400°F (200°C).
- Trim the woody stems of the Brussels sprouts and remove any brown outer leaves.
- Rinse the Brussels sprouts in cold water and pat them dry.
- Cut the sprouts in half lengthwise to allow for even cooking.
- Toss the Brussels sprouts in a large mixing bowl with ½ tablespoon of extra virgin olive oil, ½ teaspoon of salt, and 2 twists of black pepper.
- Arrange the sprouts in a single layer on a baking sheet.
- Roast the Brussels sprouts for 20-25 minutes until golden brown, stirring halfway through for even browning.
- While they roast, prepare the dressing by combining the remaining ingredients in a small jar and shaking vigorously or whisking in a bowl.
- Once roasted, transfer the Brussels sprouts to a serving platter and drizzle with the dressing.
Notes
For an exciting twist, consider adding smoked paprika or garlic powder to the seasoning.
