- 4 boneless, skinless chicken breasts
- 1 cup crumbled feta cheese
- 1 cup chopped fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Optional: red pepper flakes, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Pound each chicken breast to an even thickness.
- Season the chicken breasts with salt, black pepper, garlic powder, dried oregano, and smoked paprika.
- In a bowl, combine the feta cheese, chopped spinach, sun-dried tomatoes, and minced garlic. Mix gently.
- Place a portion of the filling in the center of each chicken breast and roll tightly. Secure with twine or toothpicks.
- Heat olive oil in a skillet over medium-high heat and sear the chicken rolls seam-side down until golden brown, about 3-4 minutes.
- Transfer the seared chicken rolls to the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Notes
Be careful not to overstuff the chicken and don’t crowd the pan while searing.
