Description

A delightful rolled chicken recipe filled with tangy feta, fresh spinach, and sun-dried tomatoes for a comforting meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 1 cup chopped fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Optional: red pepper flakes, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound each chicken breast to an even thickness.
  3. Season the chicken breasts with salt, black pepper, garlic powder, dried oregano, and smoked paprika.
  4. In a bowl, combine the feta cheese, chopped spinach, sun-dried tomatoes, and minced garlic. Mix gently.
  5. Place a portion of the filling in the center of each chicken breast and roll tightly. Secure with twine or toothpicks.
  6. Heat olive oil in a skillet over medium-high heat and sear the chicken rolls seam-side down until golden brown, about 3-4 minutes.
  7. Transfer the seared chicken rolls to the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Notes

Be careful not to overstuff the chicken and don’t crowd the pan while searing.
