Delightful Russian tea cakes, also known as snowball cookies, that are rich, buttery, and melt in your mouth, perfect for the holidays.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and 1/2 cup powdered sugar until smooth.
  3. Beat in the vanilla.
  4. Combine the flour and salt in another bowl, then gradually add to the creamed mixture until well blended.
  5. Stir in the pecans.
  6. Shape dough into 1-inch balls and place them onto ungreased baking sheets.
  7. Bake for about 12-15 minutes or until the bottoms are lightly browned.
  8. Roll the warm cookies in powdered sugar after removing them from the oven.
  9. Allow to cool completely and roll in powdered sugar again before serving.
