Ingredients

- 2 cups of tortellini pasta noodles
- 2 cups of shredded kale, stemmed and finely chopped
- ½ cup of crumbled feta cheese
- ¼ cup of grated Parmesan cheese
- ¼ cup of sun-dried tomatoes, sliced
- ¼ cup of extra-virgin olive oil
- 2 cloves of garlic, minced
- 2 tablespoons of fresh basil leaves, chopped
- 1 tablespoon of fresh lemon juice
- Salt and pepper to taste
Instructions
- Make the Basil Garlic Oil Dressing: In a small bowl, combine the olive oil, minced garlic, basil, and lemon juice. Season with salt and pepper. Mix thoroughly to create a fragrant dressing.
- Prepare the Pasta and Kale: Boil water in a large pot. Add the tortellini and cook according to package directions. In the final minute, add the shredded kale to the pot. Drain the pasta and kale together.
- Assemble the Salad: In a large bowl, mix cooked tortellini and kale with sun-dried tomatoes, crumbled feta, and grated Parmesan. Pour the dressing over the mixture.
- Toss and Chill: Gently toss everything together. Cover and chill in the refrigerator for at least 30 minutes before serving.
Notes
Let the salad chill for at least an hour to enhance flavors. Store in an airtight container in the fridge for up to three days.
