Sausage & Apple Stuffed Butternut Squash

Description

A cozy autumn dish combining sweet butternut squash with savory sausage and fresh apples, perfect for sharing with family and friends.


Ingredients

  • 1 butternut squash
  • 1 tablespoon olive oil
  • Salt and freshly ground pepper
  • 1 pound Italian sausage, removed from casings
  • 1 small onion, chopped
  • 3 cups baby spinach
  • 1/2 apple, cut into small pieces
  • 1/2 cup dried cranberries
  • 2 tablespoons chopped rosemary
  • 1 cup panko breadcrumbs
  • 1 cup finely grated parmesan cheese
  • Salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cut the butternut squash in half, remove the seeds, and place it on a parchment-lined baking sheet.
  3. Sprinkle the squash with salt and freshly ground black pepper. Bake for 35 to 40 minutes or until very tender.
  4. While the squash roasts, sauté the sausage in a skillet over medium heat until cooked through.
  5. Remove the sausage from the pan and place it into a bowl.
  6. Add the chopped onion to the skillet and sauté until opaque and tender, then add it to the bowl with the sausage.
  7. Sauté the spinach in the same skillet until just wilted, then add it to the bowl.
  8. Stir the sausage, onion, and spinach together. Season with salt and pepper to taste.
  9. To the sausage mixture, add the breadcrumbs, parmesan cheese, cranberries, apple, and chopped rosemary. Mix well.
  10. Scrape out some of the squash flesh to make room for the filling and add what you’ve scraped out to the sausage mixture. Stir to combine.
  11. Generously fill the butternut squash halves with the sausage mixture and sprinkle extra Parmesan on top.
  12. Return the stuffed squash to the oven and bake for another 10 minutes or until heated through and the cheese melts.

Notes

Ensure to check for doneness by piercing the squash with a fork to see if it is tender.
