  • 2 medium zucchinis, sliced into half-moons
  • 8 ounces of mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon dried thyme (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Wash zucchinis and mushrooms thoroughly.
  2. Slice zucchinis into half-moons and thinly slice the onions and mushrooms. Mince the garlic.
  3. Heat olive oil in a large skillet over medium heat for about 1 minute.
  4. Add sliced onions to the skillet and sauté for about 3 minutes until translucent.
  5. Incorporate minced garlic and sliced mushrooms, cooking for 3-4 minutes until mushrooms soften.
  6. Add sliced zucchini, seasoning with salt, black pepper, and thyme, and sauté for 3-5 minutes until tender but firm.
  7. Taste and adjust seasoning as needed.
  8. Remove from heat and transfer to a serving dish. Garnish with fresh parsley if desired, and serve warm.

Notes

For enhanced flavor, consider adding lemon juice or grated cheese. Experiment with different herbs and vegetables.
