Ingredients

- 2 large cucumbers, sliced
- 4 slices of cooked bacon, crumbled
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup sour cream
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the sliced cucumbers, crumbled bacon, red onion, and parsley.
- In a small bowl, whisk together the sour cream, apple cider vinegar, salt, and pepper.
- Pour the dressing over the cucumber mixture and toss gently to combine.
- Chill in the refrigerator for 15-20 minutes before serving.
Notes
Substitute other herbs if parsley isn’t available; dill or chives also work well. For added crunch, consider including cherry tomatoes.
