Ingredients

  • 1/4 cup chopped fresh parsley

  • 1 tablespoon apple cider vinegar

Instructions

  1. In a large bowl, combine the sliced cucumbers, crumbled bacon, red onion, and parsley.
  2. In a small bowl, whisk together the sour cream, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the cucumber mixture and toss gently to combine.

Notes

Substitute other herbs if parsley isn’t available; dill or chives also work well. For added crunch, consider including cherry tomatoes.
