  • 2 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1 teaspoon lemon juice (5 ml)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon (15 ml) chopped fresh parsley

Instructions

  1. Pat the scallops dry with paper towels.
  2. Season the scallops with salt and black pepper on both sides.
  3. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  4. Add the scallops to the skillet, ensuring they are not crowded.
  5. Sear the scallops for 2-3 minutes on each side until golden brown.
  6. Remove the scallops from the skillet and set aside.
  7. Lower the heat to medium and add the remaining butter to the skillet.
  8. Add the shallot and garlic to the skillet and sauté until fragrant, about 1-2 minutes.
  9. Pour in the heavy cream and stir well to combine.
  10. Simmer the cream sauce for 3-4 minutes until it thickens slightly.
  11. Stir in the lemon juice, and season with salt and black pepper to taste.
  12. Return the scallops to the skillet and gently coat them with the cream sauce.
  13. Cook for an additional 1-2 minutes to warm the scallops.
  14. Garnish with chopped fresh parsley before serving.
