- Black pepper, to taste
- 1 tablespoon (15 ml) chopped fresh parsley
Instructions
- Pat the scallops dry with paper towels.
- Season the scallops with salt and black pepper on both sides.
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add the scallops to the skillet, ensuring they are not crowded.
- Sear the scallops for 2-3 minutes on each side until golden brown.
- Remove the scallops from the skillet and set aside.
- Lower the heat to medium and add the remaining butter to the skillet.
- Add the shallot and garlic to the skillet and sauté until fragrant, about 1-2 minutes.
- Pour in the heavy cream and stir well to combine.
- Simmer the cream sauce for 3-4 minutes until it thickens slightly.
- Stir in the lemon juice, and season with salt and black pepper to taste.
- Return the scallops to the skillet and gently coat them with the cream sauce.
- Cook for an additional 1-2 minutes to warm the scallops.
- Garnish with chopped fresh parsley before serving.
