A quick and easy sheet pan dinner featuring juicy chicken, colorful bell peppers, and crunchy cashews, all roasted to perfection with a flavorful marinade.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into wedges or large dice
  • 1 cup unsalted cashews
  • ¼ cup soy sauce (substitute tamari for gluten-free)
  • 3 tbsp honey (or maple/agave syrup for vegan option)
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated or minced
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro leaves, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking tray with parchment or foil for easy cleanup.
  2. Whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and ginger until smooth. Season with salt and black pepper as needed.
  3. Add the chicken pieces to the bowl, tossing to coat them fully in the marinade. Let the chicken absorb the flavors for at least 15 minutes.
  4. Scatter the red and green bell peppers along with the red onion across the prepared sheet pan. Spread the marinated chicken on top in a single layer.
  5. Drizzle any leftover marinade over the assembled ingredients.
  6. Roast the tray in the preheated oven for 20 minutes. Remove and gently stir for even browning.
  7. Sprinkle the cashews over the chicken and veggies. Roast for an additional 10-15 minutes, until the chicken reaches an internal temperature of 165°F.
  8. Remove the tray from the oven and let it rest for a minute. If desired, scatter fresh cilantro over the top and serve immediately.
