Description

A flavorful and simple sheet pan meal featuring tender chicken and crispy baby potatoes, marinated with lemon and balsamic vinegar for a delicious weeknight dinner.


Ingredients

  • 1 pound baby potatoes, halved
  • 4 tablespoons olive oil, plus 1/3 cup for the dressing
  • Salt and black pepper to taste
  • 6 boneless skinless chicken breasts or thighs
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh chopped oregano
  • 2 teaspoons smoked or regular paprika
  • 6 garlic cloves, chopped
  • 1 shallot, chopped
  • Red chili flakes to taste
  • 2 tablespoons lemon juice
  • 1 cup mixed chopped herbs (dill, basil, or thyme)
  • 2 tablespoons sliced pepperoncini
  • 1 cup torn green olives
  • 2 tablespoons sesame seeds
  • 1 cup Tzatziki sauce
  • 6 ounces feta cheese, crumbled

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the baby potatoes with 2 tablespoons of olive oil and season with salt and black pepper.
  3. In a separate bowl, mix the chicken with 2 tablespoons olive oil, balsamic vinegar, Dijon mustard, oregano, paprika, garlic, shallot, salt, pepper, and chili flakes.
  4. Place the marinated chicken around the potatoes on the baking sheet.
  5. Bake for 25-30 minutes until the chicken is cooked thoroughly.
  6. Prepare the herby olive mix by combining the remaining olive oil, lemon juice, fresh herbs, pepperoncini, torn olives, and sesame seeds.
  7. Combine Tzatziki and crumbled feta in a bowl.
  8. Once the chicken is done, spoon the herby olive mixture over the chicken and potatoes and serve with the Tzatziki feta sauce.

Notes

For best flavor, marinate the chicken for at least 15-30 minutes. Serve with a side salad or grain-based salad for a complete meal.
