Description

A simple and vibrant sheet pan meal featuring salmon, tender asparagus, and roasted baby potatoes, all cooked together for easy clean-up and maximum flavor.


Ingredients

  • 4 (6 oz | 170 g) salmon fillets
  • 1 pound asparagus, ends trimmed
  • pounds baby potatoes, halved
  • 1 cup cherry or grape tomatoes
  • 4 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 2 teaspoons seasoning blend of choice, plus ½ teaspoon extra
  • 2 tablespoons honey
  • 1½ teaspoons dijon mustard
  • 1 teaspoon sriracha or any garlic chili sauce
  • 1 tablespoon melted butter
  • Lemon slices for serving
  • Chopped fresh parsley for serving

Instructions

  1. Preheat your oven to 425°F. Line a large sheet pan with foil or parchment paper.
  2. Toss the halved baby potatoes with 2 tablespoons of olive oil, salt, pepper, and 2 teaspoons of the seasoning blend. Spread them evenly across the sheet pan and bake for 20 minutes, shaking halfway through.
  3. While the potatoes are baking, prepare the sauce by whisking together the melted butter, sriracha, honey, dijon mustard, and the remaining ½ teaspoon of the seasoning blend with a pinch of salt and pepper in a small bowl.
  4. After 20 minutes, push the potatoes to one side of the pan. Arrange the salmon fillets, asparagus, and cherry tomatoes on the pan.
  5. Drizzle the asparagus and tomatoes with the remaining 2 tablespoons of olive oil, seasoning them with salt and pepper.
  6. Return the pan to the oven and bake for another 15 minutes, until the salmon is cooked through and the asparagus is tender.
  7. If desired, broil for a few minutes at the end for added color.
  8. Serve immediately, garnished with chopped parsley and lemon slices.
