Description

A comforting stew featuring beef, hearty vegetables, and rich flavors, perfect for cold evenings.

Ingredients

Scale
  • 2 pounds ground beef
  • 57 potatoes, peeled and sliced thin or cubed
  • 1 large onion, sliced thinly or finely chopped
  • 57 stalks celery, chopped
  • 2 cans dark red kidney beans, liquid included (15.516 oz. each)
  • 2 cans whole kernel corn, liquid included (15 oz. each)
  • 2 cans diced tomatoes, juice included (14.5 oz. each)
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium-high heat, crumbling it as it cooks until uniformly brown.
  2. Drain the fat if needed, keeping some for richness.
  3. Layer the ingredients starting with the beef, followed by potatoes, onions, and celery.
  4. Add the canned kidney beans, corn, and diced tomatoes, including juices from the cans.
  5. Season with salt and pepper to taste.
  6. Simmer the stew, stirring occasionally, until potatoes are tender and flavors meld.

Notes

For added depth, consider using garlic, bay leaves, or adding a splash of vinegar before serving. Tasting as you go is essential for seasoning.
