Ingredients

  • 2 packs of udon noodles
  • Chinese cabbage or your favorite leafy green, chopped
  • 200 grams of fresh beef, thinly sliced
  • 2 cloves of minced garlic
  • 1 white onion, sliced
  • 1 tablespoon of sesame oil
  • 1 tablespoon of soy sauce
  • 1 teaspoon of oyster sauce
  • 1 teaspoon of corn starch mixed with water for slurry
  • 1 teaspoon of Chinese white rice vinegar
  • 3 tablespoons of dark soy sauce
  • 2 teaspoons of freshly ground black pepper
  • 3 tablespoons of water
  • 1/2 teaspoon of potato starch
  • Salt to taste
  • Sugar to taste

Instructions

  1. Whisk together 1 tablespoon of minced garlic, sesame oil, soy sauce, oyster sauce, Chinese white rice vinegar, and corn starch slurry. Marinate the beef in this mixture for at least 10 minutes.
  2. Boil water in a large pot and cook the udon noodles for 1-2 minutes. Drain and set aside.
  3. In a small bowl, combine dark soy sauce, oyster sauce, freshly ground black pepper, water, and potato starch to create a sauce.
  4. Heat a wok over medium heat, add oil, then add minced garlic and sliced onions. Stir-fry until fragrant.
  5. Add marinated beef and cook for 2-3 minutes until browned.
  6. Stir in prepared black pepper sauce and let it simmer until thickened.
  7. Toss in cooked udon noodles and greens, combining everything well.
  8. Serve immediately, enjoying the delightful flavors.

Notes

For a personalized touch, adjust the levels of salt, sugar, and pepper as per your taste. Fresh ingredients greatly enhance the dish.
