Ingredients

  • 1 lb Brussels sprouts – sliced thin
  • 2 cups lacinato kale – thinly sliced
  • 1 cup sliced red onion
  • 1/2 cup shelled pistachios
  • 1/3 cup dried cranberries or pomegranate seeds
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons dijon mustard
  • Zest and juice of 1 lemon – about 2 teaspoons of lemon zest and 1 tablespoon lemon juice
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup olive oil

Instructions

  1. Combine thinly sliced Brussels sprouts, kale, red onion, pistachios, and dried cranberries in a large mixing or salad bowl.
  2. In a medium-sized mixing bowl, whisk together the dijon mustard, lemon juice, zest, maple syrup, salt, and pepper.
  3. As you whisk, gradually pour in the olive oil to create a creamy dressing.
  4. Taste the dressing and adjust salt and pepper, if necessary.
  5. Pour the dressing over the salad mixture and toss to combine thoroughly.
  6. Top the salad with the grated parmesan cheese and serve.

Notes

For best taste, store dressing separately until serving to keep greens fresh. Experiment with other nuts or add apple slices for variation.
