A tender and flavorful slow-cooked beef chuck roast enveloped in smooth, savory gravy. Perfect for chilly gatherings.


Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (for thickening)
  • 2 tablespoons water (for thickening)

Instructions

  1. In a large skillet, sear the beef chuck roast on all sides until browned.
  2. Place the chopped onions, carrots, celery, and garlic in the slow cooker.
  3. Add the seared beef on top of the vegetables.
  4. Pour in the beef broth, Worcestershire sauce, thyme, salt, and pepper.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. Remove the beef and vegetables from the slow cooker.
  7. To thicken the gravy, mix cornstarch and water in a small bowl until smooth, then stir into the slow cooker with the liquid and cook on high for 15-20 minutes.
  8. Serve the beef sliced with the gravy poured over the top.
