Ingredients

- 2 lbs beef chuck roast
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons cornstarch (for thickening)
- 2 tablespoons water (for thickening)
Instructions
- In a large skillet, sear the beef chuck roast on all sides until browned.
- Place the chopped onions, carrots, celery, and garlic in the slow cooker.
- Add the seared beef on top of the vegetables.
- Pour in the beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Cover and cook on low for 8 hours or until the beef is tender.
- Remove the beef and vegetables from the slow cooker.
- To thicken the gravy, mix cornstarch and water in a small bowl until smooth, then stir into the slow cooker with the liquid and cook on high for 15-20 minutes.
- Serve the beef sliced with the gravy poured over the top.
