- 4 cups mashed potatoes (homemade with some skins left on for texture)
Instructions
- Begin by seasoning the beef roast with salt, black pepper, onion powder, garlic powder, and dried thyme.
- Heat a skillet on medium-high and brown the beef roast on all sides for about 3-4 minutes per side.
- Transfer the roast to your slow cooker.
- Add sliced onions around the roast.
- Pour in the beef broth, Worcestershire sauce, and soy sauce, ensuring everything is well combined.
- Set your slow cooker to low and cook for 6-8 hours, or until the meat is tender and easily shreds with a fork.
- Remove the beef roast and set it aside on a plate.
- Mix cornstarch and cold water in a small bowl to create a slurry and stir it into the slow cooker.
- Cook on high for an additional 15-20 minutes until the sauce thickens.
- Shred the beef and serve it over the mashed potatoes, ladling the sauce over the top.
