Description

A tender, flavorful beef roast simmered in a rich broth with onions and spices, served over creamy mashed potatoes.

Ingredients

Scale
  • 2 pounds beef roast (chuck or round) or brisket
  • 1 medium onion, sliced (or shallots for a milder taste)
  • 2 cups beef broth (vegetable broth for a lighter version)
  • 2 tablespoons Worcestershire sauce (or soy sauce)
  • 1 tablespoon soy sauce (low-sodium if preferred)
  • 1 teaspoon garlic powder (fresh minced garlic for a stronger taste)
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (Italian seasoning for a different profile)
  • 1 teaspoon black pepper (adjust according to taste)
  • 1/2 teaspoon salt (adjust based on salted broth)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water (for slurry)
  • 6 slices bread (white or Texas toast, or whole-grain for added fiber)
  • 4 cups mashed potatoes (homemade with some skins left on for texture)

Instructions

  1. Begin by seasoning the beef roast with salt, black pepper, onion powder, garlic powder, and dried thyme.
  2. Heat a skillet on medium-high and brown the beef roast on all sides for about 3-4 minutes per side.
  3. Transfer the roast to your slow cooker.
  4. Add sliced onions around the roast.
  5. Pour in the beef broth, Worcestershire sauce, and soy sauce, ensuring everything is well combined.
  6. Set your slow cooker to low and cook for 6-8 hours, or until the meat is tender and easily shreds with a fork.
  7. Remove the beef roast and set it aside on a plate.
  8. Mix cornstarch and cold water in a small bowl to create a slurry and stir it into the slow cooker.
  9. Cook on high for an additional 15-20 minutes until the sauce thickens.
  10. Shred the beef and serve it over the mashed potatoes, ladling the sauce over the top.

Notes

Browning the beef adds flavor; feel free to experiment with different broth types.
