Description

A comforting slow cooker recipe featuring tender chicken and vibrant broccoli in a creamy Alfredo sauce.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 12 ounces fettuccine pasta
  • Fresh parsley (for garnish)

Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Add the broccoli: If using fresh broccoli, chop it into florets and spread it over the chicken. If using frozen broccoli, add it directly on top.
  3. Make the sauce: In a bowl, mix the heavy cream, chicken broth, garlic powder, onion powder, salt, and pepper. Pour this mixture over the chicken and broccoli.
  4. Cook: Cover the slow cooker and set it to low for 240 minutes or high for 120 minutes until the chicken is tender and fully cooked.
  5. Cook the pasta: About 15-20 minutes before serving, boil water in a separate pot and cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  6. Shred the chicken: Once the chicken is cooked, shred it directly in the slow cooker using two forks. Stir gently to mix with the Alfredo sauce and broccoli.
  7. Add the cheese: Stir in the grated Parmesan cheese until it melts and combines with the sauce.
  8. Combine with pasta: Add the cooked fettuccine to the slow cooker and toss everything together until well-coated with the sauce.
  9. Serve immediately: Once everything is mixed, serve hot.

Notes

Consider adding other veggies like spinach or peas for variation.
